About Our Owners

 

Owner, Steve Paternoster is a longtime restaurateur, with involvement in restaurants all over the United States, a former flight attendant, he honed his hospitality style on flights as far flung as you would imagine....Honolulu to Sydney, Seattle to Tokyo, Houston to Paris, New York to the Caribbean. Steve served as a Purser for Continental Airlines for a period of nearly 12 years, left the airline business and moved straight to Restaurants. A veteran of family restaurants, his passion for the culinary arts grew. Steve, also the proprietor of Scalo Northern Italian grill in Albuquerque, has three children, one on the way, and is married to Jane. Steve has served a number of leadership positions in several Non Profit Groups, and is the former Chairman of the Board for the New Mexico Restaurant Association.

 

 

 

Owner, Marc Maurin-Adam comes from the French countryside, he was employed for many years in the French Telecom industry, also as a very well regarded French actor. Marc opened two restaurants in his native france, both of which were very successful, The Rio Grande Cafe, and also La Noche. Marc met and fell in love with Claire, his wife, and they moved back to her childhood home of Albuquerque. Claire had gone to France to apprentice as a chef. Marc came to work with Steve at Scalo Northern Italian Grill and they hit upon a business plan. Marc did the construction, and was responsible for the concept, so that now, La Provence now exists.
